Fermented in our waxed open fermenters with heading boards and pressed early straight to new French oak hogsheads, for 12 months on gross lees. Blackberry & bramble fruit with hints of bready yeast characters, full rich palate & great length, dominated by black forest berries whilst retaining freshness.
