"Once picked, the fruit was minimally handled to preserve its quality. It was pressed and transferred to temperature-controlled, stainless-steel tanks for 48 hours of cold soak. The juice underwent a cold fermentation, lasting 10-14 days with selected yeasts to maintain and enhance the cool-climate character of the wine. It did not undergo malolactic fermentation. The wine was bottled October 2009. 13% alc." |

"Initial grassy note to the aroma. More classic Hunter lime and cutgrass in the background. Low 'weight' mouth feel but great lemongrass flavours and citrus acidity. The alcohol is in fact sitting on 10% which is one of the lower levels of recent years. The natural acidity and clean crisp flavours makes this a perfect fresh Semillon. Enjoy with Asian Food and any seafood, especially fresh shucked oysters. 10% alc." |

"The grapes were de-stemmed, hand sorted, crushed, and pumped into stainless steel tanks, where they were cold soaked for 24 hours. The must was then inoculated with native Rhône yeasts, and it fermented for 6 days with regular pumpovers. The wine was left on the skins for an additional five days before pressing. It was then racked to barrel for malolactic fermentation and aging. Wood aging: 20 months in 225 liter French oak barrels (50% new, 25% second fill, 25% third fill). RS: 2.3 g/l pH: 3.74 TA: 5.6 g/l Alcohol: 15%" |

"Reddish purple colour. Intense nose of red and black ripe fruit, with notes of spice bread, liquorice and vanilla. Fleshy and complex on the palate; rounded and well-structured with nice, elegant tannins." Technical Notes
" The Cabernet Sauvignon comes from an 18-year-old vineyard in Agrelo, a region 1,000 meters in elevation. The vineyard locations for Malbec are from Lulunta at 800 meters elevation, a 40-year-old vineyard and also from Vistalba, at 1150 meters elevation, a 50-year-old vineyard. The grapes are harvested by hand in half-ton bins. They are hand-selected and de-stemmed. After malolactic fermentation, CARO is aged in 60% new French oak barrels for 14 monthss. The wine is racked every 4 months with the final assemblage performed at the first racking. Blending is performed at the moment of the first racking. The wine is purified with stiff egg whites." |
