2015 Seville Estate "The Barber" Pinot Noir

Wonderful aromas and flavors of red fruits and spice growing deeper through the finish along a backbone of fine tannins. This is no tutti-frutti starter Pinot. Be glad and drink up with your favorite lamb, duck, mushroom, and lentil dishes especially those with eastern spices or herbs a plenty.

" Bright red with a pale hue. The wine is perfumed showing sour cherries, earthy understones with lifted cinnamon and nutmeg spice. Classic carbonic maceration characters of juicy fruits and all spice burst onto the palate and are nicely matched with some whole bunch savouriness. The wine finishes clean with great acidity and length. A really approachable style that has all the right bits in place."
"The fruit is whole bunch pressed into open top ferment tanks with 20% whole bunch. Must is cold soaked for 4 days, then hand lunged daily during ferment. Wine is gently pressed to 300 and 500 litre French barrels (10% new) to ensure delicate structure. 13.5% alc."
