2015 Penley Phoenix Cabernet Sauvignon
Coonawarra, South Australia

Great nose full of currant, dark earth, and some sort of brown spice all reflected on the palate as well. Medium-bodied and a touch of nice, grainy tannins. Flavors really blossom with food and a little air.

Winemaker's Notes
"Vibrant aromas of dark berries and black fruits, blackberry, mulberry, plum and a touch of licorice. Subtle floral notes intertwine with the dark core of fruit. Subtle hints of smokey oak add complexity and savory notes. The palate is medium bodied with fine grained tannins. Succulent acidity adds lift and freshness to the dense brooding fruit. This is a complete and harmonious wine with great persistence of flavor. Bright and delicious, speaking of contemporary Coonawarra Cabernet. Ready to drink now or for enjoying the rewards of cellaring for the next 5-7 years for some secondary fruit characters to shine through."

Technical Notes
"Matured 15 months in French oak, 19% new. The oak is minimal but discernible. The small amount of wood tannin and fruit flavours will aid maturation if required. 14.5% alc."
