Flavors burst happily forth on the mid-palate with dark chocolate and concentrated blackberry in the lead, finishes a long time later with some vanilla, oak, and chocolate reverberations. We want this wine with mushroom stew and German chocolate cake.

"Aromas of black forest fruits, chocolate and vanilla. On the palate, plum, chocolate and spice. A full-bodied, rich wine."
"The fruit was crushed and inoculated with a selected yeast strain. Fermentation took place in concrete open top fermenters at 20 - 28C for approximately 5 - 7 days, mostly headed down under oak boards. Maturation using the best American oak puncheons for 14 months. Will drink well now and cellar tremendously into the medium term. 14.5% alc."
