Technical Notes
"After picking and gently pressing each vineyard parcel was tank fermented, using selected yeast strains. At the end of fermentation the wines were aged on the yeast lees for several months prior to blending and bottling. Acid 8.0g/L; pH 3.26; 13.5% alc."
