"Intense violet color, plums, black cherries, licorice and dried herb aromas in the nose. Sweet, round and ample in the mouth with a lingering finish." Technical Notes
"Careful and gentle destemming with partial berry crush with the purpose to provide fresh berry aromas and a carbonic maceration expression to the wine. Cool pre-fermentation maceration for 2-3 weeks to extract primary aromas, flavors and intense color under non-alcoholic phase. Fermented at 25C, keeping the freshness the wine is then racked to new, second and third use French barrels (33% of each one) where the wine is aged during 10 to 12 months before being bottled. Total Acidity: 5. 79 g/l (tartaric acid) pH: 3.5 Residual Sugar: 2. 14 g/l 14% alc." |
