Spoiler alert --- this is no butterball Chardonnay. This lovely wine is all about minerality from the use, primarily, of stainless steel to the absence of malolactic fermentation. Think pie dough, nuts, lees, wet rocks, and a most delicious quaff.

Winemaker's Notes
"Aromas of sweetcrust pastry and fresh apple are balanced with the scent of a freshly struck matchstick. The palate has imposing concentration with refined acidity and a serious structure finishing with pleasantgrapefruit characters."

Technical Notes
"Hand harvested with selections taken from multiple passes through our elevated hillside vineyards. Whole bunch pressed to tank with static settling for clear juice. Racked off solids and allowed to go through a wild fermentation in a mixture of old seasoned barrels and 70% in stainless steel tank. The wines stayed on yeast lees throughout the winter with no stirring prior to the addition of sulphur dioxide in the Spring to prevent any Malolactic fermentation to take place."
