Winemaker's Notes
"Deep garnet in colour with vibrant magenta bubbles. Aromas of concentrated blackcurrant with hints of licorice, spice and dark cherries. Creamy bubbles and luscious sweetness envelop the plump blackberry mid-palate, which is enhanced with hints of savory development. The long sweet fruit finish is balanced with fine tannin and acidity."

Technical Notes
"100% Shiraz, a blend of specially selected parcels of Shiraz sourced over several vintages. Each parcel displays different characteristics, some rich and powerful, some with minimal oak influence, and some with soft tannin structures. With secondary fermentation, these individual components combine, leading to a fresh lifted wine with complex aromatics. T.A. 6.3g/L; pH 3.39; Residual Sugar 26.5g/L. 14.5% alc."

Winemaker's Notes
"Aromas of toasty brioche and delicate citrus subtly emerge from the fine beads. Full and crisp flavours of apples and strawberries linger on the refined acid structure. "

Technical Notes
"60% hand-picked Chardonnay and 40% hand-picked Pinot Noir. Whole-bunch pressed to retain fruit delicacy. Clean inoculated primary ferment prior to racking off lees and base wine stabilisation and clarification. Base wines then aged and blended prior to tirage. Minimum 18-months of aging on lees before disgorging with minimal dosage to retain complexity yet revitalise palate."

Winemaker's Notes
"61% Chardonnay/39% Pinot Noir. Light yeasty aromas, good fruit on the nose, and rich, creamy complexity on the palate. Fine mousse gives freshness and finesse."

Technical Notes
"Both varietals are hand-picked: Chardonnay at 18-19.5 B for fruit and elegance. Pinot Noir at 18.5-20 B for complexity and length of flavour. Whole bunch pressing ensures fractional recovery. After settling of juice the two varieties are fermented separately. They are then crossblended along with reserve wine if necessary, bottled and left for 15-18 months yeast contact time before disgorgement. Total acid 5.3 g/L; pH 3.25; Residual Sugar 8.5 g/L""
